Ingredients for Charbroiled Oyster Sauce
8 tbsp. butter
1 1/2 Tbsp. minced garlic
dash of oregano
ground black pepper
5 tbsp fresh grated parmesan cheese
5 tbsp fresh grated Pecorino Romano cheese
1 dozen fresh shucked oysters on the half shell, do not loosen oysters from half-shell
1 loaf fresh French Bread
Preheat your gas or charcoal grill to high heat. Melt the butter in a small saucepan over low heat. Add in garlic, oregano and pepper. Remove from heat and set aside. Place oysters on half shell on the high heat, generously top each oyster shell with butter sauce to encourage the flame. When the oysters curl a bit on their sides, they are done (about 5-6 minutes).
Mix cheeses together, quickly top oysters with cheese, serve topped with Parsley garnish and fresh cut French Bread for dipping.
